Carnation Evaporated Milk is a product that does not have to be used only in desserts. Evaporated milk can be used in many different dishes. I received two coupons for Carnation Evaporated milk, one holiday recipe booklet, a $50 gift card to cover some of the cost of the ingredients, and a can topper for the unused Carnation evaporated milk. I was asked to make a dish out of the booklet and a dish of my own. I decided to make the loaded potato potluck favorite with a peppered lime chicken breast with steamed asparagus. The loaded potluck was definitely a favorite and was from the holiday recipe booklet. For dessert I made a recipe of my own that is a Pecan-Topped Pumpkin Pie, the recipe calls for:
1 1/4 cups coarsely chopped pecans
3/4 cup packed brown sugar
1 15 ounce- can pumpkin
1 1/2 cups of light evaporated milk
3/4 cup granulated sugar
3 eggs lightly beaten
1 1/2 teaspoons pumpkin pie spice
3 tablespoons butter melted
For the pie crust you can use any premade pie crusts. Preheat the oven to 375 degrees. Line a 9-inch pie pan. In a small bowl combine pecans and brown sugar. Spread 3/4 of pecans on the bottom on the lined pie plate. Combine the rest of your ingredients as well as 1/4 teaspoons salt mix everything well. Bake your pie for about 50 minutes. Let your pie cool and serve it.
